Spicy Chicken with Sweet Potato and Tomato Rice


Last night I made this dish from a recipe we made at Cathy Mueller's cooking class. Cathy added some spinach to hers and I think you need a bit of colour to help the presentation but I didnt have any spinach left.
The chicken and sweet potato are cooking in the varoma at the top whilst the rice is bubbling away in the basket at the bottom in the tomato mix. Great all in one meal.

I halved the amount of chicken and sweet potato as the full amount is HUGE!

Bread Rolls from EDC

These were made using the basic bread recipe in the EDC. The girls dont like seeds on theirs and also dont like them as crusty, hence, the colour difference. My husband laughs at the shapes of them but I threw them together real quick for a sausage sizzle at the last minute.

Devonshire Tea anyone?






I usually make my scones with cream in the mix anyway and was lucky enough to find this converted recipe by Nay-nay at:

Zucchini Soup


I often make this up when we have no idea what to have for lunch. Both my girls love it.


Ingredients:


2 x Zucchini's roughly chopped

1 x Onion quartered

1 x Potato

25 g Butter (or you could use splash of olive oil instead)

500ml Stock (If I use ready made stock from supermarket I add 1 tbs of my thermo stock paste)

Salt and Pepper to taste

Cream to taste (from 2 Tbs)


Method:


Throw all vegies into the thermomix and mix 5 seconds on speed 5


Add butter and 6 mins on temp 100, Reverse speed 1


Add Stock and 35 mins temp 100, reverse speed 1


Blend/blitz until smooth or consistency you prefer.


Add Salt and Pepper to taste and cream to taste and give a quick 2 sec blend together

Banana, Walnut & Date Bread


Made this from the EDC thermomix Cookbook. It got eaten really quick in this house. For me, though, next time I would reduce the sugar a bit as it was quite sweet. I think if you have nice ripe bananas they add to the sweetness.


Will definately make again.

Pattycakes/Cupcakes

I tried this recipe for cupcake/pattycakes from a recipe converted by meganjane from the Forumthermomix.com at:

I tried different sizes just to see how they would go. Havent got around to icing and decorating them. They do taste yummy tho and will be hard to see if they last long enough to get decorated and photographed ;)

My First Attempt At Focaccia




Several months ago, after being inspired by Cathy Mueller's focaccia that she made at my Varoma demo, I made my first focaccia.
I used the recipe from the Everyday Thermomix Cookbook and just added some rosemary, sundried tomatoes, sea salt and olives. Thanks for the tip on these additions Cathy.

Now I make them regularly. They are SO simple. Dough is ready in less than 3 mins. Then you just need to let it sit and prove up.
