Impossible Lemon Pie

I only had cookies and cream ice cream but I think vanilla would have matched perfectly and ice cream was a MUST to serve it with.

Even DH that didnt want me to make it took the first piece and had seconds. Not bad for someone not really into "lemony" things.

Penne with Vegies and Pumpkin Sauce by Curtis Stone


I found this recipe in my local Coles catalogue and thought I'd give it a try. I didnt have penne pasta so used spirals and didnt have real mushrooms so used a tin of champignons. Maybe these changes effected the taste as it was quite bland. It even looks quite blurr!

Unfortunately for us it didnt have the zing or flavour I was expecting. I think after roasting my pumpkin for my Risotto's I was expecting that same taste but obviously steamed blended pumpkin is different.

I used the thermomix to blend the pumpkin after I had cooked in pan and used the stock paste instead of a stock cube.

I dont think I would make this again but least I gave something new a try.

Vegetable Stock Concentrate

This is the stock concentrate made to use in soups, curries and anything requiring stock. 1 tablespoon is equivalent to one stock cube. All natural ingredients with no added preservatives or nasty MSG like some shop bought stocks.

Recipe is from the Thermomix Everday Cookbook.

Says it lasts up to 6 months in the fridge but mine is always long gone before that time.

Melting Chocolate Puddings

These were made in the thermomix from a recipe in the "Budget Busters" recipe book.

I didnt have dark chocolate so used milk chocolate. I think they would be nicer and richer with the dark chocolate added. They were very sweet so next time would reduce the amount of sugar and serve with ice cream (we had no ice cream left in the house :(


(I apologise for the amateur blobs on the plate. Was trying to be creative and then it was too late to take it off hehe)


There was also a tip in the book to say these could be baked in oven rather than in varoma. We did half in varoma and half in oven and dh really preferred the oven baked as they gave a crispy top but both were good.

Thermomix: Chicken Cacciatore with Steamed Rice and Vegies



Made this Chicken Cacciatore all in the thermomix followed by making the Steamed Rice and Steamed vegies in the Varoma.
